This is what a two month summer vacation and my mom’s constant nagging on taking cooking lessons does to me. So like any 21st century girl, I get onto youtube and look for the easiest/healthiest things I can make to pass time and satisfy (some of) my mom’s wishes. One thing about me that most people don’t know, but would be interested in finding out is that I’m a soup and salad kind of person, rather than the chocolates, cakes or ice-cream kind. This is the first time I am posting a recipe on the blog and I really hope you guys enjoy it.
Difficulty Level – I dislike cooking and have zero knowledge about it, and still I managed to make this. I guess that says it all.
Let’s get it started!
We will prepare a filling mixture and a minty sauce. I prefer to make the sauce first, since it can get chilled while I make the filling.
Ingredients for the minty sauce:
- 1 tbsp vinegar
- 3 tbsp mayonnaise or yogurt (dahi)
- 6 tbsp mint leaves
- ½ tsp sugar
- 1 green chilly
- ¾ to 1 tsp garlic paste
- 1 tsp oregano
- 6 tbsp coriander leaves
- A few drops of lemon and ½ tsp salt (as per taste)
Method of making the minty sauce:
Grind the coriander leaves, spinach and chilies first since they have a rough texture and it takes more time to make a smooth paste with it. After the mixture gets pasty, add all the ingredients in the grinder and pour the mixture into a container. Keep it in the fridge so it can get chilled.
Ingredients for the mixture:
- 1 potato boiled and chopped
- 1 spring onion finely chopped
- ½ cup red and green bell peppers chopped
- 2 tsp pizza seasoning
- 1 tbsp olive oil
Method of making the mixture:
Heat olive oil in a pan and stir fry coloured bell peppers, potatoes, olives and spring onions. Pour the mixture into a container and let it cool down for a while at room temperature.
You are almost done! 🙂
Set the canapés on a plate and add the mixture about 3/4 way full. Add the minty sauce on top of it and garnish it with coriander leaves.

P.S. Make it in large quantities because I made a lot of them and I barely had a couple of them since my mom happily gave them away to all my neighbours and family member. Ugh!
